Vegan Banana Muffins (12 muffins)


4 whole ripe bananas mashed

1/2 cup brown sugar

1/2 cup olive oil

1 teaspoon cinnamon

3/4 teaspoons salt

2 1/2 cups white flour

1 teaspoon baking powder

1 teaspoon baking soda



1. Mix bananas, brown sugar, oil, cinnamon, salt, flour, baking powder and baking salt together in a large bowl. The mixture should be similar to pancake batter, if it’s too thick add a tablespoon or two of water.

2. Fill lined muffin tin about halfway with mixture.

3. Bake at 350 for 20-25 minutes. Makes 12 muffins.

4. Enjoy with a glass of {almond} milk!
